How We Make Pure Desi Ghee
First Step:
The first step is to gather pure milk. The milk comes from buffaloes that are fed only grass and not any chemical-based food, as this milk is considered pure. This milk is collected from domestic and desi buffaloes.
Dairy farmers often focus on maximizing milk production, but we prioritize the quality and purity of the milk. We use only pure milk from buffaloes and boil it to gather cream on the surface. This cream is collected and preserved. From 10 liters of pure milk, about 2 liters of cream can be obtained after boiling it twice.
Second Step:
The cream is collected over several days. If we collect 12 liters of cream, we need 24 liters of milk from which cream hasn’t been extracted. Then, the cream and milk are mixed, boiled again, and the mixture is placed in an earthen pot. A small amount of yogurt is added, and the pot is covered with a cloth for 10 to 12 hours.
Third Step:
After 10 to 12 hours, the yogurt sets, and cream forms on the surface of the yogurt. This cream is used to make buttermilk, from which butter is extracted. The butter is then melted at normal temperature to make ghee.
Fourth Step:
Once the ghee is ready, an announcement is made, and the ghee is packaged in tins and sent to customers.
